Chhanar Sandesh or Chhenar Sandesh

     Hellowwww everyone,wassap?I am back with yet another recipe and this time it is a sweet dish or dessert.A little bit of sweetness is always welcome after a meal be it a grand feast or our day to day lunch or dinner.This recipe is the easiest recipe I have come so far in the field of sweet making and I know there is a long way to go and know.This recipe consists of some the least ingredient which are easily available in our home and requires little time.Lets get started......

Ingredients:
  1. Whole Milk: 1 litre
  2. Lemon Juice: 1/2 cup
  3. Sugar/Artificial sweetener: According to your taste
  4. Cardamom Powder:1teaspoon
  5. Saffron/Food color
  6. Raisins/Pistachios/Rose petals/Pomegranate seeds/Cashews for garnishing.
  7. Rose Water: 1 teaspoon
  8. Ghee
  9. Cheesecloth/Muslin Cloth
Procedure:
  1. Boil the milk .Remove from the heat and keep uncoverd for 5 minutes.Then add the lemon juice little by little and gently stir with a spatula.As soon as you see the milk curdling stop adding lemon juice and stir.
  2. You will see water separating from the milk and a greenish water is above and the chhana residues at the bottom.
  3. Seive the Chhana and drain the water.
  4. Under running water wash the chhana slowly.This will wash away the sourness of the lemon.
  5. Put the chhana in a muslin cloth/cheesecloth and keep it on the sieve to get rid of any remaining drops of water in it.Keep it for 2 hours.
  6. Take out the chhana in a big plate and smash it with your hand for 5 minutes.Dont over knead it.It will make it stiff.
  7. Pre soak the saffron in 1/2 cup warm milk to extract the colour,juice and flavor.If you cannot get your hands on saffron use yellow food color.A pinch is enough.
  8. Add saffron milk/food color,cardamom powder,sugar/artificial sweetener and little bit of gulab jal or rose water for that extra flavor.Mix everything.
  9. Place a non stick pan on the gas and put the chhana in it.
  10. You will see water oozing out from the chhana.This is because of the sugar.Don't panic.The water shall evaporate eventually.
  11. Cook until you see the chhana scraping out of the pan thereby forming a lump.Remember while cooking keep the gas on medium to medium low flame.
  12. Pre grease a plate with little bit ghee and spread the mixture.
  13. Let it sit for 3 minutesApply 2 drops of ghee to your palm and then make round small balls with it.
  14. Garnish with rose petals/raisins/cashew/pomegranate seed/pistachios,anything of your choice.
  15. Let it cool and serve.
