Egg and Mushroom Fried Rice

         Hellowwww everyone,wassap??I am back with yet another recipe.This is a very easy,simple a quick recipe which you can prepare in no time.This recipe hardly requires any skill set,Specially this this for all the rice lovers out there.You can have this as a breakfast,lunch , dinner,or prepare your kid's lunchboxes keeping the tummy full for a cosiderable longer period of time.So lets get started.....

Ingredients:
  1. Basmati/Brown Rice: 2 cups
  2. Onions(sliced):1/2 cup
  3. Mushroom(chopped): 1cup
  4. Eggs(scrambled): 2
  5. Salt (according to taste)
  6. Mixed Veggies(par boiled): 1 cup.Any veggies of your choice.
  7. Soya Sauce: 1 tbsp.
  8. Green chillies(optional) chopped
  9. White/Black Pepper
  10. White oil: 3 tbsp

Procedure:

  1. Boil the rice and strain it.
  2. Par boil(boiling 1/4th) the veggies.Except the mushroom.Here I have used carrots,beans,peas.
  3. Scramble the egg in 1 tbsp. oil with little bit salt and pepper.
  4. In a wok/kadhai heat oil add the onions and saute it.Add the mushroom and fry with 1/2teaspoon salt.Cover it and fry it.When the mushrooms r half done add the veggies and saute it.If you are using Capsicum/Bellpeppers add at this point of time.
  5. Add the rice and mix well along with the vegetables.Dont add salt now beause you are going to use the soya sauce which contains salt.
  6. Add the scrambled egg and mix well.
  7. Add soya sauce green chilli and pepper and mix well.Check for the salt.Fry the whole thing for 7 minutes.Turn off the gas.
  8. Give five minutes standing time and serve hot.
                You can surely improvise this with chicken and shrimp too.Fry them and add to the dish.
